Recipe: 5-Minute Dark Chocolate Cherry Snack Bites

It’s January, which means that we’re recommitting to healthy living, and for most, that involves cutting back a bit on sweets. I’m a big believer that there’s room in a healthy diet for sweet treats. In fact, I think treating yourself every now and then to foods you love is vital to maintaining a healthy diet. There are two solid methods for treating yourself healthfully – eat small portions of decadent foods infrequently and create healthy versions of your favorite treats that you can enjoy everyday. And, that’s exactly what I did with these dark chocolate cherry bites.

I have a special place in my food-loving soul for chocolate-covered cherries, but instead of mowing down a whole box of my favorite candy, I brought some of those flavors into a super healthy, protein-packed, real ingredient snack food that’s great for everyday eating. These bites are a healthful way to treat yourself while still staying on track!

5-Minute Dark Chocolate Cherry Snack Bites

Makes 16 – 1″ Bites

Ingredients

  • 1 cup unsalted almonds
  • 10 Medjool dates, pitted
  • 1/2 cup rolled oats
  • 1/2 cup dried, unsweetened cherries
  • 1 tablespoon water
  • Pinch of salt
  • 1/3 cup raw cacao nibs OR 1/4 cup dark chocolate chunks

Directions

Combine the almonds and dates in a food processor and process until the almonds are chopped into small pieces and the mixture is paste-like. Add in the oats, cherries, water, and salt. Pulse again until the mixture begins to form a “dough.” Add the cacao nibs or dark chocolate, and pulse until just combined. With damp hands, form the mixture into one-inch balls. Store in an airtight container in the fridge.

Nutrition per bite: 122 calories, 3.1g fat, 27.6g carbohydrates, 2.4g protein
