If you’re a baked potato lover, you have to try your hand at baked sweet potatoes. They’re tender, fluffy, and just slightly sweet—plus they’re packed with tons of healthy nutrients that make them superior to your run-of-the-mill white potato.
Baking a sweet potato couldn’t be much easier, and the easiest way we’ve found is to plop ’em in the slow cooker. So instead of using the oven, just put the potatoes in the slow cooker in the morning, and you’ve got perfectly tender sweet potatoes ready for dinner when you get home. Here’s how to get started!
Scrub your sweet potatoes well and pat dry.
Wrap each sweet potato individually in a piece of aluminum foil. No need to be a perfectionist about it, just get ’em covered.
3. Slow Cooker
Place the sweet potatoes in the basin of a dry slow cooker. Feel free to stack in as many as you can fit with the lid still on. Then close the lid, and cook on high for 4-6 hours, or on low for 6-8 hours.
Remove the potatoes from the slow cooker, unwrap, and serve. Sweet potatoes are flavorful on their own, so just a little touch of salt and butter is all you need to make a tasty side dish! But feel free to experiment with other flavors. Black beans and salsa are great sweet potato toppings!
