Healthy Recipe: Pumpkin Pie Overnight Oatmeal

Pumpkin is an amazing thing. It’s not only full of antioxidants, dietary fiber and vitamin A, but it also tastes amazing mixed in with your oatmeal. This recipe is sure to have you in the fall mood! Pumpkin Pie Overnight Oats

Serves 2


  • 1 cup oatmeal, rolled
  • 1 cup vanilla Greek yogurt
  • 1 cup milk (I used almond)
  • ½ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon chia seeds
  • add ins: dark chocolate chips, pumpkin seeds, coconut


Mix all ingredients together in a medium size tupperware and place in refrigerator overnight. Enjoy with roasted nuts, a sprinkle of you favorite granola, or a drizzle of maple syrup!
